13 Stages Singapore: Singaporean Celebrity Owned Authentic Malaysian Chicken Rice



13 Stages was owned by Singaporean celebrity Mark Lee and the highlight of his restaurant is that it specializes in 7 flavors of chicken and 13 types of coffee, locally known as kopi.

It was named 13 Stages in the memoir of Mark Lee's 13 personas that he role-played in his entire career as a celebrity.

First Impressions

This outlet in the second basement of Guoco Tower has a wide entrance and a well-lighted dining area. The shape is similar to that of an hourglass where it is wide at first then narrows down the middle and opens up again at the other end.




Because of its irregular shape, the placement of the tables and chairs in the dining area is impressively optimized. There is also a bright green artistic design at the ceiling that highlights its contemporary interiors. 




The Staff

The order taker was very accommodating and because we were first-timers she suggested some of their signature dishes. The server who served our food was a middle-aged lady and was very friendly.

The Service

Food preparation was fast and all our orders have been served in under 10 minutes time. Our server also initiated a small chat with us. From time-to-time, she regularly checks to see if we needed anything else. 

The Food

We ordered a couple of appetizers which were vegetables. Their bowl of Beansprouts was perfectly cooked and drizzled with their signature chicken sauce and Sansui ginger sauce. It was topped with fried shallots and chopped onion spring. The beansprouts were crunchy and tasty.

Our second vegetable was their Seasonal Greens which was a long cabbage similarly prepared as the beansprouts. Also topped with fried shallots and chopped spring onion. It was also crunchy and has the same flavor as the beansprout.

For our mains, we ordered for their Crispy Chicken Rice which was a dish with chicken-flavored rice and battered boneless chicken thigh deep-fried until golden brown. It was garnished with shreds of cucumber and some coriander leaves.

The chicken was crisp and tender but there was a piquant aroma that was too strong for my wife. So we exchanged meals. For me, I find it flavorful but I can taste that sharp spice that lingers in my mouth.

Our next main order was the Sesame Chicken. It is a unique dish with steamed chicken with sesame sauce and garnished with slices of tofu, dried seaweeds, and chopped spring onion. It has that familiar delicious taste as that of a Japanese sesame dressing for salads.

The chicken meat was soft, delectable, and has that roasty fragrance. It was served together with Chicken-Flavored Rice that has that chicken aroma but does not have that oily texture.

Our Take

It was probably one of the best chicken rice we have tried and tasted. We highly recommend the Sesame Chicken if you wish to try a different variant of chicken rice.






Operations

They are open daily from 10:00 AM to 9:00 PM. They accept all major credit cards, NETS, and cash payments.
